Zesty Bellaverde and Courgette Spaghetti

Ready in Under 15 Mins

Ingredients

  • 2 courgettes, trimmed
  • 200g bellaverde broccoli
  • 400g dry spaghetti
  • 2 tbsp extra virgin olive oil
  • 25g walnut pieces, roughly chopped
  • zest of a lemon
  • a pinch of chilli flakes

How To Cook

  1. Grate the courgettes and squeeze dry in a clean tea towel. Trim the broccoli, and chop in 3cm diagonal slices. Fry the courgettes in the oil over a medium heat for 7 mins, stirring occasionally.
  2. Add in the broccoli, chilli flakes, walnuts and lemon zest and cook for 3 mins. Season, and stir. Meanwhile, cook the pasta.
  3. Drain, add to the frying pan and toss together on a medium heat for 30 secs. Serve with a little veggie cheese if liked.
