Spring Onion Pancakes

Ready in 15 to 30 mins

Ingredients

  • 150g self-raising flour
  • 4 finely chopped spring onions
  • 5g bicarbonate of soda
  • 1 free-range egg
  • 50g margarine
  • 200ml Alpro soya milk alternative
  • 100ml Alpro soya plain yoghurt alternative
  • 1 tsp smoked paprika
  • 6 free-range eggs, poached
  • 200g baby spinach
  • 1 tsp nutmeg
  • 30g margarine

How To Cook

  1. Mix the flour and bicarbonate of soda together in a bowl. In a separate bowl, combine the egg, margarine, milk and soya yoghurt, then add this to the flour mix with the spring onions.
  2. Season well, and spoon a couple of tablespoons of mixture into a hot, oiled pan to form pancakes about 100mm across. Fry for two minutes each side.
  3. Toss the spinach with margarine and nutmeg, season well, then place (covered) in the oven at 180C/350F/Gas 4 for six minutes. Drain well and serve each pancake topped with spinach and then the poached egg on top.
