Spring Onion Pancakes
Ingredients
- 150g self-raising flour
- 4 finely chopped spring onions
- 5g bicarbonate of soda
- 1 free-range egg
- 50g margarine
- 200ml Alpro soya milk alternative
- 100ml Alpro soya plain yoghurt alternative
- 1 tsp smoked paprika
- 6 free-range eggs, poached
- 200g baby spinach
- 1 tsp nutmeg
- 30g margarine
How To Cook
- Mix the flour and bicarbonate of soda together in a bowl. In a separate bowl, combine the egg, margarine, milk and soya yoghurt, then add this to the flour mix with the spring onions.
- Season well, and spoon a couple of tablespoons of mixture into a hot, oiled pan to form pancakes about 100mm across. Fry for two minutes each side.
- Toss the spinach with margarine and nutmeg, season well, then place (covered) in the oven at 180C/350F/Gas 4 for six minutes. Drain well and serve each pancake topped with spinach and then the poached egg on top. www.alprosoya.co.uk
