Pan fried tofu and mushroom over beans and rice! So Delicious!

Healthy, yummy, easy and CHEAP! I made this after being awake at 4am and very active. I cannot recommended this meal more as a comfort/easy/lazy meal.

Ready in 15 to 30 mins

Ingredients

  • 1 block of firm tofu
  • 4 diced dried chile peppers
  • 2 diced green onion stems
  • 2-4 tbsp dark soy sauce
  • 2 garlic cloves
  • 1 can of black beans
  • 1 cup of brown rice

How To Cook

  1. Make the rice and heat the beans
  2. Press the tofu removing excess water. Meanwhile, On medium-high heat, add the soy sauce, chiles, green onions and garlic. While the veggies and soy are heating up cut tofu into desired size and shape (triangles, cubed, long stripes).
  3. Add tofu and fry on each side 3-5 minutes (most recipes say 2-3 minutes but I like my tofu crispy and cooked each side for about 5 minutes). Finished!
  4. Once everything is warm, add to a bowl, mix and enjoy! We had an avocado lying around so I threw it in as well.
