Italian Style Green Bean, Potato & Tomato Salad

Ready in 15 to 30 mins

Ingredients

  • 1 pack Cauldron Marinated pieces (160g)
  • 225g French beans, tailed and cut in half
  • 225g baby new potatoes (eg Jersey)
  • 2 tbsp freshly squeezed lemon juice
  • 4 tbsp olive oil
  • 1 garlic clove, crushed
  • handful fresh chopped thyme leaves
  • salt and freshly ground black pepper
  • 12 cherry tomatoes, halved
  • 1 lemon, cut into wedges

How To Cook

  1. Cook the beans in boiling water for 5-7 mins. Drain and refresh in cold water, then reserve.
  2. Cook the potatoes in boiling salted water for 10-15 minutes or until tender.
  3. While the beans and potatoes are cooking, mix together the lemon juice, oil, garlic and thyme for the dressing. Season to taste.
  4. Toss together the tomatoes, beans, potatoes and marinated tofu pieces and drizzle over the dressing. Serve with a wedge of lemon.

1 pack Cauldron Marinated pieces (160g) of what exactly?  By the picture, I’m guessing… tofu?

Cauldron Marinated pieces are little chunks of fried marinated tofu that are sold in supermarkets in the UK.

I think I would make it without the tofu…and I can make it with ingredients from the garden!!!
