Gnocchi Alla Sorrentina

Serves 6
Ready in 15 to 30 mins

Ingredients

  • 2 tbsp olive oil
  • 1 red onion, diced
  • 400g can Pizza Express Passata Pomodoro
  • 6 handfuls of fresh basil leaves
  • 800g gnocchi
  • 300g vegetarian mozzarella ball, cut into small pieces
  • 40g vegetarian Parmesan-style cheese, grated
  • salt and black pepper

How To Cook

  1. Preheat a frying pan and add the oil and onion and cook until the onion is translucent. Add the passata and basil and simmer for around ten minutes.
  2. Meanwhile, cook the gnocchi in salted boiling water and once they float, drain and add to the sauce and the mozzarella. Toss lightly and once the mozzarella starts to melt, place on a pasta plate.
  3. Scatter the top with vegetarian Italian hard cheese, season with salt and pepper and serve.

Quite a nice taste, I added spinach to the sauce to up the veggie content. I also replaced the parmesan with cheddar as I didn`t have any. Im not sure about the mozzarella in it, quite stringy, it might be nicer with a soft cream cheese instead.
