Serves 4
Ready in 15 to 30 mins

Ingredients

  • 225g jumbo couscous
  • 1 x 40g pack flat leaf parsley
  • 1 x 50g pack fresh mint, chopped
  • half a cucumber, deseeded and chopped
  • 4 tomatoes, chopped
  • 3 tbsp olive oil
  • zest and juice 1 lemon

How To Cook

  1. Place the couscous in a large pan with a good pinch of salt, cover with boiling water from the kettle. Bring to the boil, and then simmer for five mins until the couscous is tender. Drain in a sieve and rinse well under cold water. Place in a large bowl.
  2. Remove any tough stalks from the herbs and finely chop the leaves. Add to the couscous with the cucumber, tomatoes, oil and lemon, mix well and season to taste.
