Giant Couscous Tabbouleh
Ingredients
- 225g jumbo couscous
- 1 x 40g pack flat leaf parsley
- 1 x 50g pack fresh mint, chopped
- half a cucumber, deseeded and chopped
- 4 tomatoes, chopped
- 3 tbsp olive oil
- zest and juice 1 lemon

How To Cook
- Place the couscous in a large pan with a good pinch of salt, cover with boiling water from the kettle. Bring to the boil, and then simmer for five mins until the couscous is tender. Drain in a sieve and rinse well under cold water. Place in a large bowl.
- Remove any tough stalks from the herbs and finely chop the leaves. Add to the couscous with the cucumber, tomatoes, oil and lemon, mix well and season to taste. www.fresh-herbs.co.uk
