Fruity Granola Topping

This easy-to-make granola is just 74p a portion, and is lovely over fruit as shown, on yoghurt or even ice cream!

Serves 4
Ready in 15 to 30 mins

Ingredients

  • 50g butter
  • 5 tbsp honey
  • 100g oats
  • 50g raisins
  • 1/2 tsp ground ginger
  • 50g chopped nuts (eg walnuts, almonds, hazelnuts)
  • fresh fruit salad and/or yoghurt, to serve

How To Cook

  1. Preheat the oven to 200C/400F/Gas 6. Melt the butter and honey in a saucepan then stir in the remaining ingredients. 
  2. Pour into a roasting tin and bake for around 10 minutes until golden. Cool slightly before breaking up into small clusters. Then allow to cool completely. 
  3. To serve, fill a bowl with fresh fruit salad and sprinkle over the top. If you prefer, layer with yoghurt, or fruit and yoghurt, for an elegant snack that goes down a treat. 
  4. Alternatively, store the granola in a screwtop jar until needed and use whenever you want a little extra crunch. You can even sprinkle over ice-cream for a deliciously unusual pud
