Chilean Spicy Apple Rice Salad

Serves 2
Ready in 15 to 30 mins

Ingredients

  • 100g long grain and wild rice
  • 2 shallots, diced
  • 1/2 sweet pointed Romano pepper, deseeded and very finely sliced
  • 1 celery stick, finely diced
  • 1 Pink Lady apple, cored and diced
  • 1 tomato, deseeded and finely diced
  • 15g raisins
  • 2 tbsp chopped fresh coriander
  • 1/2 tsp mild chilli powder
  • 2 tsp chipotle paste
  • 2 tbsp 0% fat Greek yoghurt

How To Cook

  1. Cook the rice according to pack instructions, drain, rinse in cold water and drain again.
  2. Put in a large bowl with all the remaining ingredients and gently mix until thoroughly combined. Check seasoning and serve.

This sounds intriguing, I think I’ll give it a try.  I dislike long grain rice, would quinoa work well too, do you think?
