Celery Soup
Ingredients
- 2 tbsp butter, margarine or vegetable oil
- 1 large onion, finely chopped
- 1 head of celery, finely chopped
- 900ml water
- 1 vegetable stock cube
- 150ml milk
- salt and pepper
How To Cook
- Heat the butter, margarine or vegetable oil in a large pan and add the onion and celery. Cook for about 10 minutes until soft, then add the water and milk and crumble in the stock cube.
- Simmer for 25 minutes then allow to cool slightly before whizzing in the blender, in batches if necessary.
- Reheat and season with salt and pepper to taste. www.eatincolour.com
