Banana Spring Rolls
Ingredients
- 6 sheets spring roll pastry
- 4 chopped bananas
- 2 tbsp soft dark brown sugar
- 1 vanilla pod, scraped
- 100ml water
- 75g sugar
- 1 pot Alpro soya chocolate dessert
- 50g melted 70% chocolate
- 3 tbsp Alpro soya plain yoghurt alternative
For the dipping sauce
How To Cook
- Boil the water and sugar for five mins until syrupy. Lay out the sheets and divide the bananas between the sheets. Sprinkle the bananas with sugar, mixed with the vanilla.
- Brush the sugar syrup around the edge of the pastry, roll into a tight sausage-shape, brush with more sugar syrup and bake at 180C/350F/Gas 4 for eight minutes, until golden. You can roll in more sugar when removed from the oven if desired.
- For the dipping sauce, gently heat the Alpro soya chocolate dessert in a pan with the soya yoghurt. Stir in the melted chocolate. Serve so that the banana rolls can be dipped into the chocolate sauce. www.alprosoya.co.uk
