10-minute Vegetable Rice
Ingredients
- 250g pouch Uncle Ben’s Oriental Soy Sauce & 5 Spice Wok Rice
- 150g sugar snap peas or mange tout
- 150g baby sweetcorn
- 1 small red pepper, deseeded and cut into thin strips
- 1 courgette, thinly sliced
- 200g button mushrooms, finely sliced
- 40g unsalted peanuts, chopped
- 1 tbsp vegetable oil
How To Cook
- Heat the oil in a large non stick frying pan or wok. Add all of the vegetables and cook over a high heat for 2-3 minutes, until just soft
- Add the sugar snap peas or mangetout, baby sweetcorn, red pepper and the sliced courgette and mushrooms. Stir fry and continue to cook for 1-2 mins.
- Stir in the Uncle Ben’s Oriental Soy Sauce & 5 Spice Wok Rice and cook for a further 1-2 minutes. Spoon into bowls and garnish with chopped peanuts.
