    May be they do that to encourage people to encourage some people who eat meats.

    Restaurants should provide as much choice as possible, and done well meat substitute dishes can be amazing. I remember having an amazing 'duck wrap' at Eat & Two Veg in Marylebone (sadly no longer there, I believe) which used a really tasty seitan-based 'meat' with plum sauce. I've tried to make it myself with tinned seitan, but it's not quite as good! I've noticed a number of chain pubs offering quorn or soya mince chilli, which is cheap and filling. Of course, the more you're paying, the better you expect the food to be, but there's no reason that shouldn't include well prepared meat replacements in some of the dishes!
