I always have a stir fry bag in the freezer so whenever I chop fresh veggies, herbs or garlic I add a handful to the bag, even leftover frozen veggies is great. Perfect for stir fry, veg omelette, quiche etc.

I parboil potatoes and put them in the freezer, they're so much quicker to roast cooked from frozen!
