Your top quick meal ideas
We're all busy, so what do you cook up on a weeknight when you want no-effort, fabulous food? Here are some of our no-brainer favourites:
Root veg soup - parsnip, potato, carrot, sweet potato, jerusalem artichoke - pick your root of choice then simmer in just enough vegetable stock until soft. Puree for a thick, luscious soup, add fresh herbs, spices or cheese to taste. A little curry powder is great with parsnip, coriander with carrot, potato with veggie Stilton, sweet potato and lime zest (really!)
Pasta with spring vegetables - fresh tagliatelle with veggie pesto and steamed vegetables tossed through. Frozen peas and beans are getting us through for now, but we can't wait for the asparagus season...
Sausage and Smoky Bean Stew - fry an onion and a chopped celery stalk in a little olive oil, then add drained canned beans, a tin of tomatoes, a few veggie sausages and 1-2 tsp smoked paprika. Simmer until the sausages are done and the sauce thickened. Serve with mash.

Mushroom stroganoff!!!! Fry the onions, add mushrooms and some veggie gravy, cook for a bit then stir in sour cream. Soooo easy!!!!!

I always think stir-fry is the nicest quick dinner. All I need is a head of bok choi, some ready-marinated tofu pieces, beansprouts and noodles. I make a sauce by mixing soy sauce, water, tamarind paste and a little honey (I make just enough to toss through the veg, so it's coated but not swimming). It's all ready in about five minutes. Definitely healthier than most fast food.

You can't beat a nice veggie bean chilli with loads of different pulses, red onion, peppers and courgette - lashings of chilli flakes and a little splash of veggie wine also works a treat. I like putting mine in wraps and baking them in the oven with veggie cheese on top. Yum!

Roast whatever's in season, stir through some cream cheese, honey and a little fresh chilli for the 'kick' and serve with pasta.

For a really quick supper I always go for fried egg and courgettes. Crack two eggs, slice half a courgette and chuck in some garlic and Bob's your uncle.

I love a stuffed courgette! or if they are in season then a stuffed courgette globe!!! first thing is to cut the courgette in half so that you have two boats and then scoop out the fleshy centers. stir fry some onion until soft in 3 tablespoons of oil, then add the chopped fleshy courgette centers with some garlic, maybe some vegetarian bacon then pop a slice of bread into a blender and make some crumbs and add that to the mixture and cook for a further 8 minutes roughly until the bread has absorbed any left over oil. if you would like to add some mozzerella to the mix then allow it to melt in the pan and stir it through the mixture. Whilst doing this rub a little oil onto the courgette and pop into the over for 10 minute when it comes out it should be soft. Now stuff with the mixture above and pop it back in for another 8 minutes and you will have a very very yummy stuffed courgette which will leave you feeling stuffed

Vegetables are very beneficial for health, you can use the vegetables in different shapes.
You can use it raw shape, fried shape, in salads, in soups, and in juices shape.

I cook quorn pieces and onion in a pan (I generally dry fry but sometimes use bit of olive oil) add thick gravy, put into an ovenproof dish and top with readymade puff pastry for a delicious pie

I go for fried or roast or steam, that's the quickest.
