    Too many potatoes - ideas?

    I seem to have ended up with more potatoes than i can handle! Any ideas for storing them before they all sprout? Do they freeze well, or will i have to cook them first?

    Dont just put them in the freezer, they need to be at least part cooked before you freeze them

    Why not try my recipe for Potato Skins - yummy and different way of using some of them up

    Baking potatoes
    Onion Marmalade
    Mozzerella

    Cut the baking potatoes in half length ways, put back together (using kitchen paper to wipe off any liquid) and wrap in kitchen foil

    Put into oven on 240 for 1 hour and lower oven to 220

    Take out of oven, separate, put back into oven open sides up - 20 minutes

    They should be starting to brown on top when you take them out. Now scoop out the middle of the potato, leaving as much or little potato as you would like.

    Fill the hole you have created with onion marmalade, top with grated cheese and put back into the oven for 10-15 minutes (until the cheese is done)

    Tip: The potato is nice cold, mashed up and mixed with coleslaw

    just put it on the chiller don't freeze them to much.

    May be you need to make them a fries so it will not be wasted.
