recipes with sweet potato
we keep getting sweet pots in our veggi box which i love but can only have sweet potato jackets so many times!!! any good ideas for them? fancy the idea of a sweet pot curry if anyone knows a good reciep.

Sweet potato soup.
1.Cut the sweet potato into chunks and microwave till tender with 1 cup water. Once cooked puree in the food blender, Add 1/2 pint water or enough water to make required consistency.
2.Fry finely diced onion in a little olive oil, when the onions become translucent add the sweet potato puree . Season with salt and black pepper and a squeeze of lemon juice.
3.Simmer for 3-4 minutes .
4.Transfer to serving bowls and drizzle a little swirl of low fat cream on top.
Serve with hot crusty bread.

Sweet Potato Crisps.
Peel the sweet potato and slice thinly using mandolin.
In a large baking tray spread out the the sweet potato slices and spray with a little olive oil,
Bake in a preheated oven for 30 minutes turning the crisps half way through and spraying them again.
Cook till crispy and Enjoy.
They will crisp up upon cooling.

Sweet Potato Mash
Boil the sweet potato in some water.
Once cooked mash with a potato mashed, stir in some cream and season with salt and pepper. Serve with any main dish.

Now that the warmer weather is here (almosts) we try and grill outdoor often, and one of our favorite dishes is just thinly sliced sweet potato and zuccini, marinated in chilli, garlic and olive oil, then cooked on the gril
