I had some gorgeous sweet potato wedges yesterday with some quorn mince. Boil the wedges for 5 minutes then throw them in the oven with a light drizzle of oil and salt and pepper. Yummy! What did you all have?

I had an organic sloppy joe seasoning mix (all veggie) that I'd brought back from the States some time back and made up at the weekend with soya mince. So it's night 3 - I've had it as chilli and as a sloppy joe, and I thought its last outing might be as either a jacket potato filling or a sort of spicy shepherd's pie with mash on top... mmmm.... decisions!

When I make chilli (as I did on saturday!) I always make a huge pan, freeze half and eat half. Usually stick some with some pasta and leave to eat cold - yummy

I think rice is the best for dinner because it is light as compare to bread.

Tonight is going to be super simple:

Wholewheat Tagliatelle in a couple tablespoons of pre home-made Sunflower Seed Pesto, some lettuce and cucumber sprinkled with cyder vinegar dressing on the side, and a chunk of brown bread and olive margarine!

Going for some super healthy and delicious homemade lentil and vegetable soup tonight with some crusty bread! Nothing like a bowl of soup to warm you from the inside on a day like today when its rotten inside
